This one involves very little effort, so I imagine it already speaks to a lot of Dads, particularly if you use boxed or bagged salad mixes, which we often do.
PREP TIME: 10 minutes
COOKING TIME: 10 minutes
1 tablespoon olive oil
500g diced chicken (can be either breast or thigh)
1 teaspoon kosher salt
1 teaspoon ground pepper
Caesar salad mix – 2 bags (can use fresh produce if you prefer)
Grated Parmesan cheese, for serving
Dice your raw chicken. The cut of meat is up to you. Some guys are Thigh-Men, others are Breast-Men. For this recipe, either is favourable as long as the kids will eat it.
I’m a proud Breast-Man.
Toss them into a warm (medium-high) pan seasoned with olive oil, salt and pepper. Stir generously until all the meat is white, then every few minutes until cooked through.
While that’s happening, toss your salad in a large salad bowl. Use whatever dressing, croutons, bacon bits and cheese are preferable to you. Mix well.
Once the chicken is cooked and seasoned to taste, serve the salad, adding the chicken on top after. I find this easier as sometimes one of my daughters decides she wants the two items separate on her plate. Really it’s just to avoid the explosion of emotions from any one of my kids.
