Whichever way you do it, is up to you. We’re a burrito house and that’s only because they’re easier to eat and Easy is the trump card here.
Pork and turkey can be your friends. We use lean ground as they’re not as greasy. Pork adds a nice saltiness and the turkey makes for a bit of a lighter burrito. But let’s be honest, any meat is a good meat.
PREP TIME: 10 minutes
COOKING TIME: 10 minutes
1 tablespoon olive oil
500g diced mean (can be any meat of your choice)
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon of cajun spice
1/2 cup of grated cheese
1/2 cup chopped tomatoes
1 avocado smashed
half lettuce shredded
1 teaspoon lemon mixed into the avo
1 pack tortillas
Fry and season your meat of choice to taste. While it’s cooking, shred lettuce, dice some tomato, grate cheese and smash avocados for those who like guac.
If you’re feeling adventerous you drop a dollop of lite sour cream in there.
We use diced tomatos to mix into the avocados to get some acidity and flavour.
Refried beans also go over well for 3 quarters of our kids and that is considered a massive win. They’re easy (see, there’s that word again). Plop the glob into a pan and stir until warm. Boom!
Let the kids add the stuff they want. We have the caveat in place that whatever they choose, there has to be a veggie of some kind on it. I’ve even chopped up cucumbers to add to a burrito for a picky kid!
Roll the tortilla up for them and serve.
Always a crowd pleaser. Our kids always ask for seconds!
